After completing hotel school in Belgium, Pieter had the opportunity to come to France. It was at the Château de la Chèvre d’Or ( Michelin) that he met Lucie.
Together, they continued their journey, working at the Shangri-La Hotel in Paris, before deciding to move to the mountains in Haute-Savoie. It was in this environment that they found their balance.
They both settled at Emmanuel Renaut’s Flocons de Sel (* Michelin) in Megève**, where Pieter, as Sous-Chef, stayed for eight years.
After her time at Flocons de Sel*, Lucie continued her path working with Serge Vieira (), Le Belvédère (*), La Bouitte ()**, K2 Palace, and **Le Farçon ()** with Julien Machet.
Pieter went on to head the kitchen at Le Montgomerie ( Michelin) at K2 Altitude in Courchevel before moving to Bozel, where they opened their first restaurant, Achillée.
