Inspired by the surrounding beauty of the Dolomites, it is understandable that Theodor Falser creates dishes that are very close to nature. Hand-picked ingredients and produce sourced locally from South Tyrol are inevitable on his menu. Think about rare vegetable varieties, freshly picked herbs and ancient grains. The haute cuisine presented by Theodor is authentic and awe-inspiring.

His dishes are a perfect blend of innovation, tradition and each with a unique identity.

He knows perfectly how to take his guests on a culinary journey through South Tyrolean nature, enlightening each one of the senses through the experience.

Theodore has led the kitchen of Johannesstube since 2014, and under his guidance, the restaurant was awarded a Michelin star within his first year.

 

Theodor grew up on a farm in South Tyrol, in the middle of nature.

Now, as a chef,  each one of his dishes aims to showcase that nature at its fullest.

His culinary career led him into important chef positions in Ecuador, China, Malaysia and the United Arab Emirates. Now, back in his homeland, he is head of the kitchen of Johannesstube at the Engel Hotel and Spa in Nova Levante.

Located at an altitude of 1,200 meters in the South Tyrolean village of Welschnofen, nestled at the foot of the majestic Dolomite mountain range, the Engel Hotel and Spa has a backdrop unlike any other. A space where one can truly embrace the grandeur of nature.
