"Being an ethical chef is not so much a choice as a duty."
David Kinch is an acclaimed American chef whose distinctive vision has helped shape contemporary Californian cuisine. As the founder of Manresa in Los Gatos, he led the restaurant to three Michelin stars, earning international recognition for cooking that expressed the landscape and seasons of the California coast.
Drawing on French technique, Japanese attention to detail and Catalan influences, Kinch places exceptional ingredients at the heart of his cuisine. His dishes balance precision with creativity, allowing flavour, texture and the natural character of each ingredient to guide the experience. His close collaboration with growers, notably Love Apple Farms, became central to Manresa’s identity and its connection between garden and kitchen.
A recipient of the James Beard Foundation’s Best Chef: Pacific award, Kinch is also the co-author of Manresa: An Edible Reflection. His work reflects a thoughtful approach to gastronomy, rooted in curiosity, craftsmanship and a deep respect for the place where food is grown.
